Countries around the world have developed dietary guidelines to establish a basis for public food procurement, nutrition, health and agricultural policies, and nutrition education programs that are intended to foster healthy eating habits and lifestyles. These guidelines are developed with scientific rigor to ensure they represent the latest scientific evidence yet provide accessible advice on foods, food groups and dietary patterns individuals should consume to obtain the required nutrients, promote overall health and prevent chronic diseases. Many countries have recently or are beginning the process to update their dietary guidelines with potentially major impacts on dairy products. This session will look at how dairy is characterized in a variety of dietary guidelines around the world. The worldwide climate change has resulted in many traditional dairy producing areas substantially reducing water usage and/or capturing, treating, and reusing water for dairy farming and dairy processing operations. With the World Health Organization as well as the UN Codex Alimentarius Commission focusing on these issues, it is important to identify opportunities for the international dairy industry for water use reduction and reuse. This session's speakers will share their experiences and practical recommendations on how to reduce water usage as well as how to capture, treat and reuse water on dairy farms and dairy processing operations in order to increase sustainability, sustain operations and reduce impact on the surrounding environment.
